How to Make a Good Pizza Sauce
First Recipe
Ingredients
- 1/2 kg red tomatoes
- 1 large onion , finely chopped
- 2 sticks celery (ajmoda) , finely chopped
- 3 tbsp fresh cream
- 1 tsp chilli powder
- 1 tsp dried oregano or 2 pinches of carom seeds (ajwain)
- 2 tsp sugar
- 2 tbsp refined oil or salad oil
- salt to taste
Method
- Put the tomatoes in hot water. After 10 minutes, remove the skin and grate into a pulp.
- Heat the oil and fry the onion and celery for at least 5 minutes.
- Add 1/2 teacup of water and cook for 3 to 4 minutes.
- Add the tomato pulp, chilli powder, oregano, sugar and salt.
- Boil on a slow flame for at least 10 minutes.
- Add the cream and mix.
Second Recipe
INGREDIENTS
- 2 cloves of garlic
- 2 onions
- 1 tablespoon of olive oil
- 400g tin of chopped tomatoes
- 140g tin of tomato purée
- 2 teaspoons of oregano
METHOD
- Peel the garlic and chop it into tiny pieces. Peel the onions and chop them into tiny pieces.
- Put the oil into a frying pan on a medium heat. Add the garlic and onion. Fry for 3 minutes until the onion is soft. Stir frequently to stop it sticking.
- Add the tomatoes, tomato purée and herbs. Stir thoroughly.
- Bring to the boil, then turn down the heat until it is just boiling. Cook for another 5 minutes, until the sauce has reduced.
ADDITIONS & ALTERNATIVES
- For Arrabbiata sauce add ½ a teaspoon of chilli flakes.
- Use mixed herbs instead of the oregano.
